Ingredients
-1 (8 oz) bag of tortilla chips
-½ cup sliced black olives
-¼ cup sliced green onions
-2 cups shredded taco cheese (Mexican blend or Monterey Jack work great)
-2 jalapeños, sliced
-Fresh cilantro
-Spicy Idahoan Garlic Goddess Seasoning (garlic, onion, sea salt, jalapenos and habaneros)
-Salsa, sour cream, and guacamole (for serving)
Instructions
Layer the nachos:
In a cast-iron skillet or camp-safe pan, add half of the tortilla chips. Sprinkle on half the cheese, black olives, green onions, and jalapeños. Repeat the layers with the remaining chips and toppings.
Cook over the fire:
Cover the skillet loosely with foil to help the cheese melt. Place the pan over indirect heat or on a grill grate. Cook for 5–10 minutes, or until the cheese is fully melted and everything is hot.
Garnish and serve:
Carefully remove the skillet from the fire. Top with a generous servicing of Spicy Idahoan seasoning on top of the melted cheese. Top with fresh cilantro if desired. Serve hot with salsa, sour cream, and guacamole on the side.
