The Easiest Easter Side Dishes (That Taste Like You Tried Really Hard)

Most holiday dinners follow the same kind of guidelines. We have the main dish, which you spend all day cooking, and the side dishes that are kind of just there for moral support. While the main dish does deserve most of the attention because it's likely to cook all day and, you know, you don't want to char it…the side dishes deserve a little spotlight too. Let's dive into four recipes that can spice up your holiday sides. And of course, make your spring holiday dinner unforgettable.

Garlic Roasted Carrots

These garlic-roasted carrots are a perfect twist on a spring staple side dish. In this recipe, we used our Idahoan Goddess Seasoning (garlic, onion, sea salt, and jalapeño), but if you wanted a little extra spice with your sweet, try the Spicy Idahoan Goddess!

  • Toss carrots with olive oil, a drizzle of honey, and a generous dose of Garlic Goddess Seasoning.
  • Roast at 425°F for about 25 minutes until caramelized.
  • Finish with a pinch of salt.

These seem to disappear fast. Make extra!

Crispy Smashed Potatoes (Crowd Favorite)

Ain't nothing like a crowd-pleasing mashed potato side dish. This recipe helps you serve something everyone will love, making your Easter dinner easier and more enjoyable.

  • Boil baby potatoes until you can stick a fork in them, then remove from the heat.
  • Smash the potatoes one by one on a baking sheet; they should be half an inch to an inch high. You can use the bottom of a drinking glass to smash them!
  • Drizzle with olive oil and season heavily.
  • Sprinkle some Parmesan cheese over the top of each potato
  • Roast at 450°F until crispy (about 25–30 minutes).

Crispy outside, fluffy inside. Hard to mess up.

Lemon Garlic Asparagus (fresh + bright)

Let's add a fresh, bright touch to your plate with a simple citrus twist. Using our Citrus Goddess Seasoning, this easy recipe will impress without stress, making your meal memorable.

  • Preheat your oven to 450 degrees.
  • Snap off the end of your asparagus.
  • Toss asparagus with olive oil and Citrus Garlic Goddess seasonings. You can also squeeze a lemon if you're not using the Citrus one.
  • Roast or sauté until just tender.

Put it on the table, watch it disappear, then hand out the recipe because everyone will be asking you for it.
